In addition to gracious rooms, warm hospitality, and beautiful grounds, Highpoint Manor Inn serves a wonderful full breakfast each and every morning. We have very hard working chickens, and our guests say such wonderful things about the meals that we serve, so we thought we'd gather some of our favorite recipes here. Make these in your own home to have a Taste of Highpoint of your very own!

Banana Pecan Pancakes
2 cups pancake mix
1 cup cottage cheese
1/2 cup sour cream
2 bananas sliced thin
1 tablespoon oil
1 tablespoon sugar
2 eggs
3/4 cup milk
1 cup chopped pecans

Mix ingredients together thoroughly in large bowl, pour 1/4 cup mixture on hot griddle, flip over when top bubbles, cook till golden brown. Serve with whipped butter and favorite topping.

Eggs Mayhew
Poached eggs
Sausage patties
English muffins
Cheese sauce

Place cooked sausage patty on toasted english muffin. Place one poached egg on top of sausage patty. Cover with 1/4 cup cheese sauce. Garnish top with dill leaves.

Cheese Sauce
4 tablespoons butter
4 tablespoons flour
1 1/2 cup milk
8 cubes Velveeta cheese
1/4 teaspoon garlic salt
1 tablespoon parsley
1 tablespoon chives
1/4 teaspoon pepper

Melt butter in saucepan, stir in flour till blended. Add milk all at once. Cook over medium heat stirring constantly till thickened. Add cheese and seasonings. Stir till cheese melts. Serve over Eggs Mayhew. This is a particular favorite!

Prickly Pear Salad Dressing
Harvest 6 fresh, ripe prickly pears, and burn off spines over a gas range or campfire.
Boil down the 6 freshly harvested prickly pears until they have the consistency of mashed potatoes.
Blend pears with 6 ounces Extra Virgin Olive Oil.
Slowly add simple syrup, garlic powder, onion powder, salt, pepper, lemon juice, and balsamic vinegar to taste.
Strain through a chinois or cheesecloth.
Blend again with one raw egg (optional).
Will keep, refrigerated, for 4 days.

Jalapeno Pestado
Fresh jalapenos
Raw garlic
Raw white onion
Cilantro
Extra virgin olive oil
Sea salt, Black Pepper, Cumin, Chili powder to taste
